If you want to add some pizazz to your party, allow Chef Evelyn to prepare a meal featuring dishes from Latin American countries such as Nicaragua, Puerto Rico, Mexico, and Cuba. 

 

Feeling adventerous? Ask your personal chef to create a menu with dishes from Brazil, Peru, Spain or the Dominican Republic.

 

Don't worry if you can't take the heat. We can adjust the spice level of your meals to suit your taste and that of your guests.

Papas Rellenas - An inside-out potato balls stuffed with chorizo (sausage) and then fried to perfection

 

Mini Churrasco Shish Ke-bob with Plantains and Chimichurri Sauce - Grilled skirt steak and ripe plantains with chimichurri sauce

 

Corn Salsa and Chips - A naturally sweet salsa enhanced with grilled corn, tomatoes, onions, poblano peppers, red peppers and cilantro 

 

Ceviche Mixto - Latin style sushi. Seafood salad cook in citrus served with chips.

 

Seafood Filled Mini Mofongo Cups - Fried plantain cups filled with a fiery Vercruzana seafood stew

Paella a la Valenciana - Spain's classic rice stew overflowing with shrimp, mussels, calamari and clams, chicken, chorizo and vegetables

 

Siete Mares - Inspired by Nicaraguan coastal cuisine, our 'seven seas" is a light bodied seafood broth finished with a touch of milk

 

Adobo Pork with Yuca - The ultimate Nicaraguan confort food. Pork marinated in Annatto and Adobo seasoning and served with cassava.

 

Braised Oxtails - Slow cooked oxtails in a rich aromatic sauce

 

Nicaraguan Churrasco - Grilled flank steak or skirt steak served with Chimichurri Sauce

Yuca al Mojo -  Cuban style cassava in garlic sauce with sautéed vegetables

 

Garden Yellow or Classic White Rice - Latin style yellow rice with peas, carrots and red bell peppers or classic white rice

 

Arroz con Gandules - A Puerto Rican classic. Pigeon peas and yellow rice.

 

Gallo Pinto -  Nicaragua's classic red beans and rice combo. "Gallo Pinto" is Spanish for "Speckled Rooster."

 

Sautéed Corn with Ancho Chile Butter -Fresh corn grilled and then tossed in ancho chile butter

 

Platano Chutney or Fried Sweet Plantains -  A saucy hash of semisweet and mild plantains or enjoy whole slices of fried sweet plantains

 

Tostones -  Double fried plantains slices.

Nicoya Cole Slaw - Nicaraguan style salad made with shredded cabbage, radishes, carrots and tomatoes pickled in citrus juice
